Barley grass is a green cereal grass that has adapted to a wide variety of climates and is an excellent source of nutrition for both animals and humans. The young green blades of grass concentrate large amounts of nutrients absorbed from the soil. When barley leaves are 12-14 inches high, they contain all the vitamins, minerals, and proteins necessary for the human diet, in addition to many other substances that help to keep us healthy including chlorophyll, many antioxidants, and detoxifying compounds.

Grown "Right" From the Start
BARLEYGREEN™ is organically grown and processed in Oxnard, California. Because of its unique geology, Oxnard has one of the richest topsoils in the world. The farming of Green Foods' barley grass begins in richly composted organic soil. No pesticides, herbicides, or chemical fertilizers are ever used. Once the soil is prepared, barley seeds are planted in rows to wait for the perfect combination of water, oxygen and temperature to sprout.
Harvested For Maximal Nutrition
The young barley plants are harvested just prior to the jointing stage, the time at which they are the most nutritious. The processing facility is just minutes away from the fields and the entire process from harvest to powder takes only 2-4 hours! This means that the product is fresh, allowing little time for loss of nutrients.
Pure Water rinse
Immediately after delivery to our processing facility, the plants are rinsed with fresh, pure water and tumbled dry. No heat, detergents, or chemicals are ever used. This is unlike many other green products, where bleaches are often used that may leave toxic by-products on the plants.
Gentle Juice Extraction
The nutrition of the barley grass resides in its juice, not the insoluble fiber. The juice is separated from the tough, fibrous outer leaf using a gentle, low-pressure extraction process. The delicate plant cells and nutrients are protected from destruction while the insoluble fiber is returned to the field for composting.
Oxygen Removal
Plant juices, left on their own, will begin to oxidize and within hours many important nutrients will be lost. Using a vacuum evaporation system, the green barley juice is concentrated and protected from oxidation by removing excess oxygen and water.
The next stop for the freshly-extracted juice is in one of four refrigerated 1,200-gallon stainless steel tanks.
Organic maltodextrin, a complex carbohydrate derived from corn and treated with enzymes, is added to coat and protect the enzymes and other molecules so they will not chemically react with each other. After drying, these carbohydrates form a protective matrix around the juice particles to keep oxygen away from the proteins and other delicate nutrients.
Spray Drying: the Most Important Step
The most critical step is the drying process since many nutrients can be easily lost to heat and oxidation during this stage. The concentrated green barley grass juice is pumped through an atomizer and spun dry in warm air so that the juice particles do not exceed body temperature.
Granulated for Solubility
The bulk powder is put through a granulation process where the fine powder is transformed into larger, uniformly-sized granules making it easier to dissolve when mixed with water or other liquids.
Quality Control
Each lot is inspected at different stages of production for taste, solubility, pH, protein, chlorophyll, and microbial content. In addition, nutritional analyses and other quality assurance tests are performed by independent offsite laboratories.

Green plants, especially green cereal grasses, are the perfect whole food. They are recognized as the basis of the food chain because they are the ultimate source of nutrition for both animals and humans. Whether our diet includes meat or is a strictly vegetarian one, green plants are our principal source of micronutrients (vitamins, minerals, essential fatty acids, and essential amino acids) and they also provide a wealth of beneficial phytochemicals including antioxidants, enzymes, and chlorophyll, which help to protect and repair the tissues of the body.

In addition, BARLEYGREEN™ and our other products that include organic barley grass, contain an array of phytochemicals. These include three special types of phytochemicals that research has shown are important to our health: carotenoids, flavonoids, and chlorophyll.




These fat-soluble pigments give fruits and vegetables their yellow, orange and red colors. Green leafy vegetables are rich in carotenoids but their pigments are masked by the green color of chlorophyll. Dietary carotenoids provide a significant portion of the body's vitamin A, particularly in a vegetarian diet. Many carotenoids are antioxidants that protect cells against free radicals by neutralizing them before they cause oxidative damage. Carotenoids including alpha-carotene, beta-carotene, and lutein are potent antioxidants that help protect the body from free radical damage.

In addition to being antioxidants, carotenoids also help to rejuvenate the body by promoting the growth of healthy cells and inhibiting the growth of unhealthy ones. The beneficial actions of carotenoids are optimal when a variety of carotenoids are consumed together, rather than alone.


These compounds were first discovered by Nobel Prize-winning biochemist Albert Szent-Gyorgi, who considered them essential to health because they seemed necessary for protecting blood vessels and capillaries. He discovered that flavonoids greatly enhance the absorption and effectiveness of vitamin C in preventing leaky capillaries and so he named them "vitamin P" (for "permeability factor").

Flavonoids are responsible for the bluish-purple colors of many fruits, vegetables, flowers, and outer skins of nuts such as the peanuts. Flavonoids are known to possess potent antioxidant, anti-inflammatory, and immune-enhancing properties. They have a beneficial action on numerous physiological processes in the body and have been found to benefit the heart, blood vessels, liver, immune system, connective tissue, adrenal glands, kidneys, musculature and nervous system.

The flavonoid compound, 2"-O-GIV was first isolated by Osawa et. al. in 1992 from young barley grass juice and found to possess potent antioxidant activity. Over the last decade, 2"-O-GIV has been well-studied by Dr. Takayuki Shibamoto and colleagues at the University of California, Davis. They have found that 2"-O-GIV, present only in young barley grass, is an extremely effective antioxidant in preventing free-radical oxidation of lipids found in the skin and blood.

Similar to other flavonoids, 2"-O-GIV enhances the antioxidant actions of vitamin C. It also helps prevent the formation of the toxic compounds malonaldehyde and acetaldehyde, which are known to denature proteins and DNA.


While green foods comprise a wide variety of different types, from single celled algae to flowering plants, they all share one thing in common, chlorophyll. The benefits of various green foods seem related to their chlorophyll content, perhaps as a result of specific beneficial substances, such as carotenoids and flavonoids

that are often found together with chlorophyll. Chlorophyll is known to help cleanse the body, fight infection, help heal wounds, and promote the health of the circulatory, digestive, immune, and detoxification systems.

Although chlorophyll is a volatile compound, the chlorophyll in BARLEYGREEN™ is stabilized by the gentle extraction and spray-drying processes. While the mechanism is unclear, chlorophyll consumption may increase the number of red blood cells and, therefore, increase oxygen utilization by the body. Interestingly, the chlorophyll molecule is similar in structure to the heme molecule of the oxygen-carrying protein, hemoglobin.
